Ingredients (4–6 servings)

Seafood

  • ¾ lb medium shrimp, peeled and deveined

  • ¾ lb cooked crawfish tails (with fat if available)

  • 1 teaspoon Cajun seasoning

  • ½ teaspoon paprika

  • ½ teaspoon garlic powder

  • ¼ teaspoon cayenne pepper

  • Pinch of salt and black pepper

Base

  • 2 tablespoons butter

  • 1 tablespoon olive oil

  • 1 medium onion, diced

  • 1 small bell pepper, diced

  • 2 celery stalks, thinly sliced

  • 6 garlic cloves, minced

  • 1–2 jalapeños or serrano peppers, diced (seeds removed for less heat)

  • 1 tablespoon tomato paste

  • ½ cup crushed tomatoes or fire-roasted diced tomatoes

Creamy Sauce

  • 1 cup heavy cream (or half-and-half for lighter)

  • ½ cup chicken broth or seafood broth

  • ½ teaspoon smoked paprika

  • ¼ teaspoon cumin

  • ½ teaspoon Cajun or Creole seasoning

  • ½ teaspoon sugar (balances acidity)

  • Juice of ½ lemon

  • ¼ cup chopped parsley


Instructions

1. Season the seafood

Toss shrimp and crawfish with Cajun seasoning, paprika, garlic powder, cayenne, salt, and pepper. Set aside.


2. Sauté the aromatics

  1. In a heavy skillet, melt butter with olive oil.

  2. Add onion, bell pepper, and celery; sauté 5–7 minutes until softened.

  3. Add garlic and jalapeños; cook 1 minute.

  4. Stir in tomato paste and lightly caramelize it for 1 minute.

  5. Add crushed tomatoes; simmer briefly.


3. Make the creamy chili base

  1. Stir in heavy cream and broth.

  2. Add smoked paprika, cumin, Cajun seasoning, and sugar.

  3. Let simmer 6–8 minutes to thicken slightly.

  4. Taste and adjust salt or heat.


4. Cook the seafood

  1. Add shrimp to the sauce; cook 2–3 minutes.

  2. Add crawfish tails; gently fold in and warm through.

  3. Add lemon juice and parsley.

  4. Simmer just until seafood is tender.

Shrimp

  • 1½ lbs large shrimp (16–20 count), peeled and deveined

  • 1 teaspoon kosher salt

  • ½ teaspoon black pepper

  • ½ teaspoon smoked paprika

  • 1 tablespoon cornstarch (helps sauce cling)

Tiger Spicy Sauce

  • 3 tablespoons butter

  • 1 tablespoon olive oil

  • 6–7 cloves garlic, minced

  • 1 teaspoon fresh ginger, grated

  • 1–2 teaspoons crushed red pepper flakes

  • 2 tablespoons soy sauce

  • 1 tablespoon oyster sauce

  • 1–2 tablespoons honey (to balance heat)

  • 1 tablespoon rice vinegar or lemon juice

  • ¼ cup chili-garlic sauce (or sambal oelek)

  • ½ teaspoon black pepper

  • Optional: 1 teaspoon gochujang for extra thickness and heat

Finish

  • 2 tablespoons green onion, sliced

  • 1 tablespoon sesame seeds

  • Extra lime or lemon wedges


Instructions

1. Season and lightly coat shrimp

Combine shrimp with salt, pepper, paprika, chili powder, and cornstarch. Toss well.


2. Sear the shrimp

  1. Heat a large skillet over medium-high with a drizzle of oil.

  2. Add shrimp in one layer; cook 1–2 minutes per side.

  3. Remove once just cooked; keep warm.


3. Build the tiger garlic sauce

  1. In the same skillet, lower heat to medium.

  2. Add butter and olive oil.

  3. Add garlic and ginger; sauté 45 seconds.

  4. Add red pepper flakes, soy sauce, oyster sauce, honey, chili-garlic sauce, and vinegar.

  5. Stir until bubbling and slightly thickened (2–3 minutes).

  6. Add optional gochujang for a spicier, stickier finish.


4. Combine

  1. Return shrimp to the skillet.

  2. Toss in the sauce until glossy and coated.

  3. Simmer 1 minute, then remove from heat.

Instructions

1. Season the seafood

  1. Add the cream and cubes of cream cheese.

6. Cook the seafood gently

  1. Add the shrimp and crawfish tails into the simmering chili.

  2. Cook 3–4 minutes, until the shrimp turn pink and curl.

    • Do not overcook—seafood toughens easily.

  3. Remove from heat immediately once the shrimp are done.


7. Finish the dish

Stir in parsley and green onions.

  • 1/4 cup butter

Instructions:
1. Shell, devein and butterfly shrimp. Cut tomatoes in half.

HOW TO PREPARE LEMON HERB GARLIC BUTTER SHRIMP
Begin by melting some butter, then incorporate minced garlic and raw, deveined shrimp. Season the shrimp with salt, pepper, and sweet paprika; cook for 2 minutes on each side. As the shrimp begin to turn pink, add butter, lemon juice, and herbs; I prefer fresh thyme or fresh basil and parsley, but feel free to use any fresh herbs you enjoy. Once the shrimp are fully pink, take them off the heat. DO NOT overcook them. If they are cooked for too long, they will become rubbery, which is certainly undesirable. In total, shrimp require only 4 to 5 minutes to cook.

Taste for seasoning and make adjustments as needed. I ALWAYS add extra lemon juice. It’s never sufficient. 🤷‍♀️

INSTRUCTIONS
Shell and de-vein shrimp, leaving tails on. Place shrimp in small bowl with salt, oregano, thyme.
In a separate bowl, cream together butter, garlic and parsley.
In a small skillet, sauté mushrooms in butter. Brush seasoning mixture lightly from shrimp, allowing some to remain. Divide the shrimp among six individual oven proof baking dishes; top with sautéed mushrooms and drizzle with remaining butter from skillet.
